I am going to Slimming World.

I have gained weight since I quit smoking. 27.5 lbs. of Fat

I won’t show an image of this amount of fat here, it’s gross!

So, my daughter saw how miserable I was about this and eventually persuaded me to join. She is getting married next year and I want to look my best in the family album!

I am chuffed about my change in eating habits, and also by the sure and steady weight loss. What has helped me most?

Glenisk Fat Free Organis Yogurt

Glenisk fat Free Organic Yogurt. And here’s why….

Slimming world allows  “Syns”  (15) per day.

Here’s my daily treat – 2 syns:  I’ve called it pat’s syns

Chopped strawberries, mixed with 2 x crushed mini meringues and topped with my Glenisk sweet topping. This is made by mixing the following:

1 x tablespoon Glenisk Fat Free Organic Yogurt

2 x teaspoons Candrell sweetner

That’s it! , Mix and pour over strawberries

Use some sweetner to sprinkle strawberries if you wish.

I have this treat EVERY night while I lose weight. Thank you Glenisk!

I’m not a great fan of the daily feeding ritual! (I can be a bit lazy in the evening!), But, I love to cook for a special occasion. So any excuse to be the hostess with the mostest, and the Sour cream, Double cream combo, butter and did I mention butter?? make their appearance. Tasting heaven.

But, the last time the opportunity presented it self,  I soon realised…………Sour cream, double cream and butter were not the best idea to maintain my weight loss.

Time to go back to the drawing board, and here is the result of my Glenisk inspired menu for dinner with friends. The recipes are below the menu.

THE RECIPE

Shred a gem lettuce heart and pile it into a couple of chilled glasses. Peel and dice a cucumber and add it to the lettuce. Mix 4 tablespoons of Glenisk Fat Free Organic Natural Yogurt  with 2 heaped teaspoons of tomato puree and a few drops (to taste) of Tabasco. Toss with 250g plump peeled prawns, a squirt of lemon juice and pinch of paprika. Pile the dressed prawns on top of the lettuce and serve with a lemon wedge balanced on the side of the glass.

Ingredients
  • Fry Lite
  • 1 onion, thinly sliced
  • 225g small button mushrooms, sliced thinly
  • 500g fillet steak, cut into thin strips
  • 1.5 teaspoon (ish – depending on your taste)  Dijon mustard
  • 1 tsp chopped curly parsley
  • 1 pot Gleniske Fat Free Organic Yogurt (Formally soured cream)
  • Sea salt & freshly ground black pepper
Method

Heat the Fry Lite  in a sauté pan over a medium heat. Add the onions and cook for 10 minutes until the onions are soft but not coloured. Add the mushrooms and fry for 2-3 minutes until beginning to soften. Remove from the pan.

Spray pan again with Fry Lite.  Add the beef and sauté quickly over a high heat for 3-4 minutes until browned on all sides. Return the mushrooms & onions to the pan. Stir the mustard into the Glenisk yogurt. Pour in the yogurt and mustard mixture on to the pan & heat through. Reduce the heat & simmer for 2 minutes. Do NOT allow this to boil. Season with sea salt & freshly ground black pepper, add some chopped parsley. Serve with plain boiled rice.

To finish I take out my favourite dessert dishes and cream jug. I just love beautiful delph,

Gil’s mum gave me the dishes, and Gil bought me the jug for my birthday a few years ago.

I fill the bowls with sliced strawberries, put plenty of Glenisk sweet topping in the jug; and we all help ourselves to the finest desert there is ” pat’s syns”
